Horseradish
(Armoracia rusticana)
Horseradish is a hardy, low-maintenance perennial that’s always there when you need it. Roots can be harvested any time between late fall and early spring. Digging through the snow in a headlamp to snip off some spicy roots for a recipe is our favorite way to harvest and one of few winter garden tasks! When digging, leave the main crown or one healthy root to ensure a new growth point for next season. We offer ‘Big Top’ horseradish, an heirloom known for its large vigorous tops and strong disease resistance.
Hardiness zone: 3-9
